Turn on the power switch. Select the operation course by pressing one of the course buttons. You can program up to four different operation courses from which you can choose. Loosen the bolt fasteners and place the cover bowl on the bowl stand. Put newly cooked rice into the drum bowl and pour sushi vinegar on the rice evenly. Place the cover bowl on the drum bowl and clamp them together with the bowl fasteners. Press the start switch and all you have to do is wait for it to finish. In case of an emergency, press this emergency button. The machine will stop operations immediately. When the operations are finished the buzzer sounds and the time display reads end. Loosen the bolt fasteners and place the cover bowl on the bowl stand. Place an empty rice box on the apron. Press the down switch. Tilt the drum and transfer the rice into the rice box.

Daily maintenance is also quite simple. The Teflon coated drum bowl can be easily washed with a soft sponge. A special air filter is equipped in the exhaust side box. It prevents vinegar fumes from diffusing and minimizes the damage to other kitchen equipment.

The rice and vinegar mixer ASM 760 thoroughly mixes rice and sushi vinegar by employing an automatic sphere rotation stirring system. It is also suitable for making Japanese style mixed rice just by adjusting the stirring time.
